Chewy chocolate cookies – what’s not to like. So easy you can rope in the children to cook these to keep them occupied. They won’t last long! Makes 18. My daughter Florence made these.
Ingredients
- 125g butter, melted
- 225g light brown sugar
- 75g granulated caster sugar
- 2 tbsp golden syrup
- 2 tsp pure vanilla extract
- 1 egg
- 325g plain flour
- ¼ tsp baking soda
- ¼ tsp salt
- 200g chocolate chips
Method
- Melt the butter in a pan on the hotplate to just barely melt it
- Add the butter to the brown and white sugar and beat until creamy and pale in colour and sugar has dissolved. Pour in the syrup, vanilla and the egg, and lightly beat until just mixed through
- Add the flour, baking soda, and salt, mixing until combined. If needed, add in one tbsp of extra flour at a time if required until the dough is still soft but easy to handle and firm enough to form one large ball
- Fold in half of the chocolate chips
- Scoop out 18-20 balls and arrange them on a lined baking sheet with parchment paper. Press the remaining chocolate chips onto the tops of each cookie
- Bake in the middle of the top oven at around 200ºC for about 10-15 minutes. The cookies will look pale and puffed up, but should be golden around the edges. Do not over bake or your cookies will become hard once they have cooled
- Allow to cool on the baking sheet for about 30 minutes
