Nothing complements turkey and ham more than Spicy red cabbage. This is a really easy recipe to cook in the Everhot and is also really nice cold with boxing day cold meats and bubble and squeak. Serves 6.
- 1 red cabbage, sliced
- 2 red onions, chopped
- 1 large apple, peeled cored and chopped
- 75g currants or raisins
- 1 tbsp brown sugar
- 2 tbsp red wine vinegar
- 1 tsp all spice
- 2 cloves of garlic
- 50g butter
- Arrange a layer of cabbage in the bottom of a casserole dish. Add layers of onions, raisins, spices, sugar and seasoning and continue to alternate the layers until all the ingredients are used.
- Pour over the wine vinegar, dot with butter. Cover with foil and bake slowly in the bottom oven for 3-4 hours. It won’t hurt to leave it in for longer.
