Spicy red cabbage

Spicy red cabbage

Nothing complements turkey and ham more than Spicy red cabbage. This is a really easy recipe to cook in the Everhot and is also really nice cold with boxing day cold meats and bubble and squeak. Serves 6.

Ingredients

  • 1 red cabbage, sliced
  • 2 red onions, chopped
  • 1 large apple, peeled cored and chopped
  • 75g  currants or raisins
  • 1 tbsp brown sugar
  • 2 tbsp red wine vinegar
  • 1 tsp all spice
  • 2 cloves of garlic
  • 50g butter
  • seasoning

Method

  1. Arrange a layer of cabbage in the bottom of a casserole dish. Add layers of onions, raisins, spices, sugar and seasoning and continue to alternate the layers until all the ingredients are used.
  2. Pour over the wine vinegar, dot with butter. Cover with foil and bake slowly in the bottom oven for 3-4 hours. It won’t hurt to leave it in for longer.
