Once you have made your own granola you will never buy it again. This super healthy granola is so easy and you can switch up what you add depending on what you have in the cupboard and what you fancy.
Ingredients
- 4 cups old-fashioned rolled oats (use gluten-free oats for gluten-free granola)
- 1 ½ cup raw nuts and/or seeds (e.g. pecans, almonds, cashews, pumpkin, sunflower, flax)
- ½ tsp fine-grain sea salt (if you’re using standard table salt, scale back to ¾ teaspoon)
- ½ tsp ground cinnamon
- ½ cup melted coconut oil or olive oil (I like the taste of coconut oil)
- ½ cup maple syrup or honey
- 1 tsp vanilla extract
- ⅔ cup dried fruit such as raisins, cranberries or chopped apricots or prunes
Method
- Line a large, rimmed baking sheet with greaseproof paper.
- Combine the oats, nuts and/or seeds, salt and cinnamon in a bowl and stir well.
- Pour in the coconut oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated.
- Spoon the granola on to the baking sheet and spread it out evenly.
- Bake in the top oven at around 180-200ºC until lightly golden, about 20-25 minutes, stirring halfway.
- Remove from the oven and leave to cool completely on the tray.
- Spoon into a jar or airtight box. It will keep for a couple of weeks.
